Partnership promotes benefits of cranberries During
the Month of December

December 3, 2008 (SAN DIEGO) — San
Diego-based Souplantation, voted one of "America's Healthiest
Restaurants" by Health magazine, has formed a partnership with the Cranberry
Marketing Committee (CMC), a committee established by the federal government
that works to promote and inform the public about the benefits of U.S. cranberries.
Souplantation restaurants will also feature several cranberry-filled recipes
on their December menu to celebrate the partnership.

DRY MIX:

3 ¼ cups white flour
2/3 cup wheat flour  
1 ½ tablespoons baking powder
1 teaspoon table salt

 Combine ingredients in a bowl and mix until thoroughly
combined.


WET MIX:

1 ¼ cups white sugar
1 ½ cups buttermilk
¾ cup canola oil
1/3 cup cracked eggs
3 tablespoon orange juice concentrate
2 tablespoon finely minced orange zest

Combine
wet mix ingredients in a large mixing bowl.

Beat
wet mix to dissolve the sugar.


MIXING:

1 ½ cups whole cranberries in sauce
Wet mix
Dry mix

Combine the cranberry sauce, wet mix and dry mix in
a mixing bowl and mix until thoroughly combined.


SUGAR TOPPING:

¾ cup brown sugar
¼ cup powdered sugar

Combine ingredients and thoroughly mix to combine.


Baking muffins:

1. Spray muffin pan with quick release spray
2. Scoop muffins with 2-oz. scoop
3. Top muffin with a 1 teaspoon sugar topping
4. Bake at 325 degrees for approximately 15 minutes

Yields approximately 2 dozen muffins

Besides providing a tangy taste, cranberries are packed with powerful anti-oxidants
that have shown promise in scientific studies to prevent heart disease, periodontal
disease, urinary tract infections, and more. To bring awareness of cranberries'
health benefits to restaurant guests, Souplantation is collaborating with the
CMC to provide all 111 Souplantation/Sweet Tomatoes restaurants with literature
about cranberries' natural nutrients and health benefits, feature Souplantation/Sweet
Tomatoes cranberry recipes on the CMC Web site and partner in future promotional
efforts.

"Americans often only eat cranberries on Thanksgiving--where 20 percent of
all cranberries nationwide are consumed in one day--and too often forget that
these berries are beneficial in their everyday diet," said Toby Stapleton,
marketing director of the Cranberry Marketing Committee. "Souplantation is
helping us educate the public that cranberries can be a delicious and healthy
addition to meals throughout the year."

Chipotle Cranberry Orange Vinaigrette

2 ½ cups whole cranberries in sauce
1 cup seasoned rice wine vinegar
½ cup canola oil    
2
tablespoons orange juice concentrate
1 tablespoon chipotle pepper in adobo sauce (puree)
1 teaspoon kosher salt
1/8 teaspoon black pepper  

Combine
ingredients and blend for
20 seconds until
emulsified.

Season to taste.

Yields
4 cups

During the month of December, all Souplantation restaurants will roll-out
several cranberry-inspired recipes, including Chipotle Cranberry Orange
Vinaigrette, Sweet Orange and Cranberry Muffins
and Cranberry Apple
Cobbler
. Souplantation will also offer Cranberry Crush Green Tea in
addition to its regular menu items.

"Not only are cranberries naturally low in sodium, cholesterol free, fat free
and a good source of fiber, but they help bring a great holiday flavor to Souplantation's
menu offerings," said Joan Scharff, executive director of brand and menu strategy
