October 13, 2010 (Alpine) -- Viejas' top chefs will team up with award-winning Ballast Point Brewing & Spirits for a special dinner on Thursday, Oct 14th, 2010 at 6:30 pm in the DreamCatcher Lounge at Viejas. Tickets are $50 each; price includes food, beer and gratuity. A percentage of proceeds will go to the Alpine School District Music & Math Program.


Welcome - Longfin Lager paired with Assorted Cheese & Cracker display.
1st Course - Calico Amber Ale paired with Grilled Fuji Apple and Smoked Butternut Squash Bisque with Crème Fraiche, Crispy Prosciutto topped with Australian Lobster.
2nd Course - Ballast Point Schooner Wet Hop Ale paired with Mixed Green Salad with Balsamic Vinegrette topped with Smoked Gouda & Mandarin Oranges.
3rd Course - San Salvador Saison paired with Cedar Plank Salmon topped with a fire Roasted Heirloom Tomato Coulis, served with grilled fingerling potatoes tossed with a Nicoise Dressing.
4th Course - Sculpin IPA paired with Grilled Jerk Lamb Chops drizzled with an Agave Reduction accompanied with pureed Olive Oil Basil Parsnips with sautéed Haircot verts.
5th Course - Victory At Sea Imperial Porter paired with Chef Creation Dessert.
