SANTEE LAKES FISH REPORT AND TROUT-IN-A-POUCH RECIPE

Davie Yang caught a tagged Trout out of lake 2 on a roostertail and won a BMX Bike.

Nik Sorenseene reeled in a tagged Trout from lake 4 on a nightcrawler and won $25.

Tom Sorn caught a tagged Trout out of lake 3 on a powerworm and won a Ladderball game.

Ron Hart from Ramona caught a 2 lb. Trout out of lake 4 using a nightcrawler. This fish was tagged and Ron walked away with a new rod & reel.

Samuel Helt from Santee caught a tagged Trout out of lake 4 and won a $25 Visa card. This fish was hooked on garlic powerbait.

Lakes regular Manny Roybal caught a tagged Trout out of lake 3 on powerbait. Manny won a collapsible fishing net.

Eddie Hernandez caught a tagged Trout out of lake 2 on powerbait and won $25.

Joseph Vechinski age 15 caught a 1 lb. 2oz. Rainbow out of lake 4 on rainbow powerbait.

Cade Kanzius age 13 from Spring Valley landed a 2 lb. 5 oz. Rainbow out of lake 4 on powerbait and mouse-tail combo.

BASS:

Alvaro Gonzalez from El Cajon hooked into a nice 1 lb. 5 oz. Bass in lake 4. This fish was released.

CATFISH:

The whisker fish are plentiful in the lakes and hungry. Don’t be surprised if you catch one while fishing for Trout with your rainbow powerbait. These Catfish will eat anything.

Recipe of the Week:

Trout-in-a-Pouch with fresh herbs and garlic

Ingredients
  • 6 small whole trout, about 1 pound each, cleaned and scaled
  • 6 pieces aluminum foil about 16 by 16-inches
  • 1 cup plus 2 tablespoons olive oil, divided
  • Salt and freshly ground black pepper
  • 3 lemons, sliced crosswise
  • 12 cloves garlic, thinly sliced, divided
  • 12 sprigs fresh rosemary, divided
  • 12 sprigs fresh Italian parsley, divided
  • 12 sprigs fresh mint, divided
  • 12 sprigs fresh marjoram or oregano, divided
  • 1 cup plus 2 tablespoons dry white wine, divided
Directions

Preheat the oven to 375 degrees F.

Rinse fish well inside and out and pat dry with paper towels. Place 1 fish in the center of each square of aluminum foil. Rub each fish with 1 tablespoon of the olive oil on both sides, then season the fish both inside and out with salt and pepper. Stuff the cavities of each fish with lemon slices, 2 cloves of the sliced garlic, and 2 sprigs each of the rosemary, parsley, mint, and marjoram. Fold all of the edges of the foil upwards to create a bowl-shape, then drizzle each fish with 2 tablespoons of the remaining olive oil and 3 tablespoons each of the white wine. Fold the top and side edges together tightly so that the fish is completely enclosed in an airtight package. (Fold the edges downward so that the fish is tightly contained.)

Place the pouches on a large baking sheet and bake for 20 to 25 minutes, or until the fish is just cooked through and flakes easily when pierced with a fork.

Serve the fish immediately in shallow rimmed dinner plates or large shallow bowls, with the collected juices drizzled over the fish. Serve immediately.

I don't use so many spices

I've prepared trout in foil over a camp fire or on a grill or BBQ. I like the delicate flavor of the fish. A squeeze of lemon and maybe some tartar sauce on the side works for me.

I had stuffed trout once

at the Gamekeeper restaurant in Idaho-- had a wonderful,nutty flavor -- delicious!
