BULL AND BOURBON
Designed by JonesBaker, Bull and Bourbon anchors Sycuan Casino Resort as the high-end steakhouse dining concept. Spanning 6,689 square feet with capacity for 212 guests, the space is warm, intimate and timeless, complementing the indulgent dishes and allowing guests to feel pampered by the entire experience. Dark walnut paneling is offset with white Calacatta Vagli marble, distressed mirrors, custom lighting and rose-colored, brushed-metal accents. A private dining room seating 20 is available for booking for those looking for a secluded, upscale dining experience.
The Bull: Chef Negrete’s extensive knowledge in the art of butchery lends itself to the restaurant’s hand-cut steaks and on-site dry aging program – a rare feature in San Diego area steakhouses. Premium proteins include a 30-ounce Australian Wagyu ribeye, sustainably raised Ora King salmon, whole striped bass from Northern Baja and a 2.5-pound baked stuffed Maine lobster. Guests can watch Chef Aldo and his team preparing their entrees on a custom wood-burning grill in the open kitchen as they enjoy appetizers such as jumbo lump crab cakes, braised oxtail ravioli, and the staff favorite: house-made pork and beef meatballs in a spicy marinara sauce.
The Bourbon: Bull and Bourbon’s classic steakhouse fare is complemented by an elaborate menu of spirits, with emphasis on 75 internationally-sourced rare and esoteric bourbons. Standouts on the bourbon list include the 1792 “Small Batch,” Angel’s Envy “Cask Strength,” and Blood Oath “Pact No. 1.” Whiskey connoisseurs will enjoy the rare Yamakazi 12-year single malt, or the lauded Hibiki 21-Year Japanese Whisky. The cocktail menu also features a selection of martinis, old fashioneds and other craft mixed drinks, alongside a hearty draft beer list and wines by the glass or bottle.
Moody and intimate, Elicit Lounge is the cocktail and raw bar component of the new Sycuan Casino Resort. Designed by HBG Design with a palette of deep plum, maroon, bold red and dark wood contrasting with a rose-gold lighting fixture and a stone fireplace, Elicit provides an atmosphere that lends itself to ending a day of sun and slots – or beginning a night of dining and gaming. Featuring lounge seating for individuals, duos and small groups, this late-night lounge is located adjacent the new gaming floor and will offer libations, sushi and small plates until late into the night. Taking advantage of the temperate Southern California climate, wall-to-wall glass doors open to the patio providing an indoor-outdoor atmosphere, including exterior bar seating to watch the bartenders in action and casual al fresco lounge furniture overlooking the pool and gardens. Weekends will amp up with live DJs providing the evening soundtrack.
The fare: Elicit incorporates a raw component serving fresh seafood and oysters alongside sashimi and a handful of sushi rolls. Other small plates offered include Kobe beef sliders, mini lobster rolls, chef’s signature buffalo wings and more.
The drinks: With a focus on experiential, the cocktail menu features a selection of cocktails mixed tableside from a roving bar cart as well as Instagram-worthy libations made behind the bar and presented in stunning black-glass coupes, crystal lowballs, and gold-brushed martini glasses. The playful selection of artisanal cocktails incorporates smoke and fire, housemade infusions, tinctures, syrups and more, and for those craving something traditional, the full bar can accommodate any cocktail, beer or wine whimsy.
RETREAT POOL AND CABANAS
Retreat encompasses the outdoor venue featuring two pools, an immense lazy river, a swim-up bar, and an expansive pool deck furnished with plush oversized daybeds and cabanas. Spanning 25,000 feet, Retreat is reserved for hotel guests only, who can relax within an adults-only pool or all-ages pool, or float down the lazy river.
The food and beverage: The poolside menu features a variety of healthier dishes like a granola bowl, big eye tuna poke, apple and quinoa salad and more, alongside heartier selections including a buffalo chicken wrap, fish tacos, main lobster roll and a Retreat burger and fries. The bar serves fresh mojitos, mules, margaritas and poolside cocktails as well as over a dozen beers and wines. For those looking for a nonalcoholic option, there is a selection of thirst-quenching, fresh-made fruit and vegetable juices.
